L’Auberge de l’Abbaye de Montheron is a protected 16th-century building located in the heart of the Jorat Natural Park. Since January 2025, the restaurant has been run by Alba Farnos Viñals and Paul Marsden.

Alba, a Catalan chef trained in Paris, has built an impressive career working in renowned restaurants across both Paris and Switzerland.

Paul Marsden, a leading voice in the natural wine world, brings his precision and passion to the dining room, offering a refined and impeccable service that leaves a lasting impression.

Set in an exceptional natural environment, the restaurant invites guests to unwind and connect with a cuisine that tells the story of its history and surroundings. Crafted alongside the best local producers and guided by the rhythm of the seasons. A sustainable proposal that revisits traditional gastronomy through Alba and Paul’s contemporary vision.

For the restaurant uniforms, we adapted our Fuchu shirt and 2 Ways apron from the permanent collection in their signature green color. Both are made from 100% cotton fabric that evolves beautifully over time, telling its own story.
