Gofio is a place where the essence of the Canary Islands is tasted in every dish and every detail. Since opening in Madrid’s Barrio de las Letras in 2015, the project led by Aida González and Safe Cruz has grown into its own distinctive voice—a cuisine that reimagines its traditions with freedom and a strong identity.

In the dining room, Aida brings sensitivity and precision, while Safe, Gofio’s chef, was raised in a family of farmers in El Tablero, Tenerife, shaped by the rhythms of the land.
Together, they have created a restaurant that feels honest, rooted, and fully aligned with their vision.

The first time Aida welcomed us into Gofio’s renewed space, we felt an immediate connection. Their understanding of the craft resonated with ours: attention to detail and a shared commitment to doing things properly.

Today, the dining team wears our Fuchu shirt and Noto trousers in charcoal grey, paired with our Ena T-shirt in Gofio’s black signature.

The garments blend seamlessly with the restaurant’s interior and identity, becoming part of the team’s everyday work.
